Of his opponent, Mathews let slip about the offer to Simpson, but pressed the fact that he wouldn't be focusing on anyone while ticking over this Christmas.
He said: "John Simpson did great beating Morris and deserves a shot at the title, but he may have other things in mind so we'll have to see whether he fancies it or not.
"But whoever lands the job they will be sure of one thing, a loud reception and a starring role on a night to remember.
"They won't win of course, but they will be able to say that they were in the opposite corner on the night that Liverpool took its first step back on the road to big time boxing."
